Just wondering if anybody has any tips or ideas for smoking game hens. Brine em? Rub em? I will be using an ECB to do these. I got 8 of them. I figure 4 on top rack 4 on bottom. Any thing y'all might have will be greatly appreciated. Thanks.
You could brine them, I typically don't. I prefer to use a milder wood on game hens, peach, apple, pecan, alder are all good choices. As with other poultry I run the smoker 300-325. I like to spatchcock them prior to cooking as I like that presentation for game hens.
