Hi!
I'm a complete newbie to smoking, but interested to learn quickly. I kind of came at this sideways... My wife happened into the local grocery store at just the right time last weekend - they were clearing out their stock of fresh rainbow trout - at $1 a pound! She picked up six 10 lb boxes, which are now safely put away in the freezer. A couple days later, she wondered aloud whether it would be a good idea to smoke the fish to avoid it getting freezer burned and, well, here I am.
My in-laws live with us, and my father in law's been hunting and fishing since long before I was born. Most recently he's taken up bow hunting both deer and turkey. He comes home with more than a few deer every fall, as well as wild turkeys when they're in season. Point is - there's a pretty good supply of fresh meat and fish almost all year long, so getting into smoking sounds like a good idea - and something we can do together.
My hope is to start out small, and work into this. I'm in the market to purchase an entry level smoker once I've done a bit more research, which is why I joined this forum instead of just lurking - so I can ask questions about people's experiences.
Looking forward to hearing everyone's opinions and learning as much as I can!
