OK so in the morning I'm smoking a 19lb turkey I'm using a mes30 with apple wood I brined the turkey wed and took it out Thursday and is currently in fridge uncovered I'm planning on smoking it at 275 that should be around a 7hour smoke Is that calculation accurate also I have been reading and should be OK to get out of the danger zone with no problem any help will be much appreciated thank you
 
Looks like you have it covered. Just make sure you get that breast meat internal temp to 165 degrees.
 
Well I'm about an hour and half into the smoke and everything is going as planned IT is at 110 very please with the turn out so far smells delicious time to start making the smoked Mac and chesse
 
Looks great - Theres a little drip on the bottom of the new MES - Don't get that MES dirty, LOL

Well there it is all finished smoked and Mac and chess is still in smoker
