Hi yell. I'm kinda new to using a smoker I have a cheap Brinkman charcoal smoker that was free and I've used it a few times making wings and sausages. I'm wanting to smoke some turkey breasts for an upcoming party we are having in about a month. I like the Brinkman ok I guess but it doesn't hold heat very well and I have to have a huge fire in it to get 200 degrees. First of all I've read about insulating them what material do u use and next I have a turkey deep fryer I'm thinking about taking the burner off of and mounting it in the bottom. Is it easier to control the heat with gas or is there an electric burner I could use in the bottom that will give me plenty of heat. I'm not opposed to using electric. I like the size of the Brinkman and it's still like new just figured I'd try to modifie it instead of buying a new smoker any input is appriciated.
