Last minute turkey question

It's almost go time, frying an 11 pounder and smoking one same size.

MES only goes up to 275, how long should it take?  I'm thinking 4-4.5 hours.

 

Also, should I fill the drip pan or should I keep it dry to keep the skin from geting rubbery.

Guess I should not have wait till the last minute with this post.

Turkey is in, if it gets done a little early I'll let it stand, then put it in the oven to reheat/crisp up the skin.
