Somewhat of a Newbie

Thread Starter

So yeah, I am somewhat new to smoking. I live in sunny Florida, about an hour northwest of Tampa. I have smoked a handful of times with family members and friends, but just last week purchased my own smoker. I bought the Master Forge two door, propane fueled. Since the purchase I have done country style spare ribs, a nice sirloin, and just tonight some chicken drums.

Overall I am, as of now, happy with my choice and purchase of the Master Forge. Like everyone else it seems, the thermometer is way off, a problem I have yet to solve. I was also losing a good bit of heat and smoke from the doors, I ordered and installed a self adhesive kit from bbqgaskets.com, and WOW what nice change that was. Easy to install and worked like a charm, it was pretty cheap too, less than twenty bucks.

As for my personal choices in rubs and sauces, I like them all!! Tonight on the chicken drums I used a Kraft ranch powder packet as a starting point and added some onion, garlic, paprika, salt, red pepper, and of course brown sugar for my rub. I used a mix of apple cider vinegar and teriyaki sauce for a during smoke mop, and finished them on the grill to crisp up the skins my kids enjoy so much.

All in all, I am hoping to gain some great new insight to the smoking world, and I hope that my limited experience can be of help to other newcomers!
