Couple thoughts for you on the brining in 5 gallon buckets I have used the oven roasting bags in the past to brine the turkey. You can then keep some ice on the bird if no fridge space is available. I have also pulled the top rack out my dishwasher to fit a 5 gallon bucket to wash prior to brining.
