Thanks guys! I'm sure I'll be asking questions along the way.

So far the brisket seems to be doing really good. I started the smoker at 630 this morning. It seemed like it had a hard time getting up to 175 to 180. I put the meat on at 830 the temp dropped down to 135 and stayed there for a little over an hour, finally it started to climb back up. Last check about 10 mins ago the meat was at 130 degrees so got a long way to go still.

Welcome to the forums Lewis!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
