I can never be accused of wasting precious Salmon meat. Yesterday I grilled a collected group of Salmon Belly pieces that I cut off when processing our fish into filets, etc. With the belly having so much fat, the meat nearby is extremely delicious. I also am the official bone scraper at home, so when the wife is done fileting the fish, I scrape the skeleton clean with a small tea spoon, of all meat that was left behind. Once done, I use the meat in a Salmon Patty recipe.
Yes, the 2nd batch of patties on the left started to get a little well done, for I was too busy taking pictures.... LOL. Also as you can see that some of the belly pieces on the right are of a more red or dark coloring. This was because I Marinated the belly pieces using two different recipes.
