Just got the concession trailer and picnic tables set up under an oak tree for shade, little by little I'll be putting down pavers, etc to dress it up. As soon as the BBQ business can support employees, I'll start on the fabrication shop.

Big hurdle for me the first week was that I have no problem feeding several hundred people that will sit at a designated time, but trying to keep food ready all day is a chore. This 2nd week will really tell how it's going to be.
 
I think you'll find that that will be the biggest problem... holding food ... and not drying out... good luck with your ventures and I'll tell the guys to stop by.. maybe they will bring me something to work.. LOL...
 
I was actually thinking about installing a plate , vertically, coming down from the top of the CC about the same point as the end of the reverse plate, reaching down to about the same height as the upper rack, That should keep the air from flowing to the top of the CC and flowing along the top making the top hotter. I could even cut something out of 1/4" hardwood and play around with the design while I'm cooking everyday.
What about installing a plate horizontally, another reverse flow plate, between the top rack and bottom rack. Like a double reverse smoker but with cooking racks between the plates. Never built one except on paper but I think it would work.
 
Haven't messed with it yet, but im thinking that a plate extended from the rack, level with the top rack, to the end of the cc will work. Just need to keep the air from flowing across the top rack.
 
Anyway, on my eighth day of business today, i had $700 in sales, so hopefully i can triple that after a month. And ill have plenty of smokers to build when it ge gets cooler, but im putting in 12 hour days right now, and that will get old after awhile.

Sticking it out and growing the business will buy you more free time.

Of course, the trade off is dealing with employees.

Some are a pleasure to work with, and others, not so much.
