I have a bunch of habeneros that are frozen. When I put them in the freezer whole I had no real plan as to what I was going to do with them. I know I could make sauce with them but I am wondering if I could thaw and then smoke them to put in the dehydrator? I should have done that from the start, I know. But is too late now that they have been froze?
 
Never did habs?

Have done paprika from bells.

Freezing and thawing will break down the cell structure.

I dry my peppers on the smoker.  Don't see why that wouldn't work?

220 to 250 for quartered bells.  About 2.5 hours.

Habs are thinner, might go quicker?

I wouldn't think smoking 'em would be a big deal after freezing? As mentioned it does break down the cell walls so in theory they should dry out quicker? I've used the hot water (not boiling) prior to placing in smoker with good results?! I smoke mine for about 8 hours then dry for another 24, all in TEFS! They are awesome!!!!

We'll my experience is with Hatch chiles so not sure it it would be the same as habs or not. The hatch chiles cooked, smoked, or not non of the above and then frozen have a very mushy texture when defrosted. Think slimey. Still good, but they have to be blended into dishes rather than chopped. Never tried drying them after freezing so don't really know how it would be. I know they are mushy gooshy slimey once thawed.
