Went about 20 miles out of the way to pick up some boneless beef shortribs today.  The first ones I cooked were boneless and the next time I decided to see if I was missing anything and got a chunk of 'em bone in.  They were great, but not as much so as the boneless.

There was a lot of waste because of the bone and they were pretty much untrimmed.  Bone in is the same price(4.99 per pound) so I've decided well trimmed boneless is the way to go.

What is weird is that out local market chain that is well known for it's meat has such disparities between store locations.  I stopped first at one in Springfield Mo and all they had was frozen bone in, so I said pass.  Drove 10 miles down the road to another where I knew they had boneless, but they were out, and at $5.99 were the most expensive.  Drove another 20 miles to the next store where I had got the boneless before and they went in the back and grabbed a big chunk and cut off 4 pounds for me.  They even trimmed all the fat and thin sections off so I got a great cut and at $4.99 per pound.  Think I will just make the trip back to that store whenever I need smokin' meat.

Gonna try to find time to cook them tomorrow, so you guys and gals will have to wait on the Q view

Just got them out of the fridge and did a light application of salt and pepper.  No onion or garlic this time.

Isn't that a gorgeous hunk of meat?!?!?!?  Doesn't exactly resemble ribs, eh?  Spied a bonus on the label.  I thought they were $4.99 per pound like last time, but did a double take when I spotted $3.99!

I am a huge Brisket fan and thought beef in the smoker couldn't possibly get any better than a properly cooked brisky!  I had never had beef short ribs before, and now that I have two batches of 'em under my belt (pardon the pun;-) Brisket definitely takes a back seat!

No joy today!  Couldn't make the smoke happen, so shooting for Wednesday.  If that doesn't work, I will have to freeze them and smoke another day

  I just looked at the forecast and they are saying rain.  Hope the heaviest goes North of us as I have no shelter to cook under

Bear:  They are boneless short ribs.  I did some Dino bones last time and there was just too much waste for the same price per pound.  I probably lost half the original weight to bones, fat and gristle, then came the shrinkage when cooked.  with boneless trimmed at the market, all I loose is the shrinkage so end up with at least a third more meat.  I couldn't tell the bones added any flavor, so all I will buy from now on will be boneless.

These will be cooked with some well seasoned Red Oak as the neighbor burns wood and told me to grab a few sticks from his winter stash.  He knows he will get some Q in return

I gotta look into that myself, because it's hard to find Dinos with a good amount of meat on them. The only way I get that is to buy Prime Ribs & cut the ribs off myself. I gotta check out the boneless short ribs!!

Gonna be hard to find them I suspect.  Go to a market that has an old fashioned meat counter and talk to the head meatcutter.  I get mine from Harter House, but I found out that different stores a few miles apart can get their meat from different suppliers.  One store only does bone in while one 5 miles away does only boneless, but is $1 a pound more expensive than the store in a little bitty town down the road a ways.

Looks like tomorrow will be a go for putting them in the smoke and it's making my mouth water just thinkin' about 'em!  .  Gonna be busy, but will try to get a pic or two going in and not just the money shot
 
Got the ribs in the smoker a bit ago, and right on cue, here came the rain!

  No shelter for my smoker, so I set up a patio umbrella in a stand to keep me dry while feeding the fire and keep rain off about 2/3 of the smoker just leaving the stack uncovered

No matter what the signs from above are today, those short ribs were meant to be...........lol
 
Try as I might, I couldn't get an actual image to show, just the link thingie to the image.  Me likeum old days better
