Trail Boglona

Hello I'm new here and new at smoking meat. I just picked up a propane smoker and am about to try my hand at smoking some trail bologna from an LEM kit. Should I hang or put the bologna on the racks. Is the 160 internal temp valid for a pork venison mixture? Thank you.

If you can hang it. It will work better at keeping it's shape. I think 154° should be good as far as IT.

I would hang it if possible as a first choice.
