Broke my new smoker in today with some turkey wings and drummies that the wife picked up.
Prep:
- Basic brine for about 4 hours
- Rubbed wings with some clarified butter (ghee) before putting on the seasoning
- Rubbed 2 wings with basic pepper, garlic powder, and a bit of Cajun seasoning
- Rubbed remaining 2 wings with Penzeys Arizona Dreaming seasoning
Smoke:
- 2 hours at 250ish; 30 minutes to finish around 320ish
- Pulled them at 170
- Used cherry chunks with a few apple chips to start
- Used 50:50 water:Apple cider in the water pan
Verdict:
- Flavor was incredible. Both rubs were good, but both wife and I liked the basic Cajun rub better
- Need to work on getting the skin crispier. Too rubbery
- Overall a big thumbs up
