Smoked Deer Jerkey

 I have always grinded my dear meat and then added my cure and seasoning and then used my dehydrator to fix my deer jerky.

 

 

This go around I'm thinking about maybe doing the same, but instead of going straight into the dehydrator putting it in the smoker for a little while to add some smoke flavor.

 

Anybody tried smoking their jerky first and THEN dehydrating it??

You bet.........many times.......especially when its raining. It is much more comfy watching it from the warm house than outside. In the summer I run it in the smoker all the way to finish.

I smoke whole muscle game meat jerky all the time in my MES 40 - no dehydrator any more. Start low temp (100-120) no smoke to let it dry for about 90 min, then start bumping your smoker temps by 10° every hour but do not go above 180° smoker temp or it will fat out (you are making ground jerky). The idea is to slowly dry it rather than cook it.

 

So you can do it the whole time in the smoker or just a few hours and then dehydrator to finish it.
