New to SMF

Can't help but think Twisted Sister when I see SMF....should give an idea of my age lol.

From Indiana and I hunt, fish, garden, make my own sausages, and currently have only smoked hot peppers on a charcoal grill.  I am a live off the land kind of guy and love using all of earths bounty.  I want to learn how to smoke all kinds of meat to get some awesome flavors going on. 

I have spent many years in the restaurant business as a cook and in management.  I know my way around a kitchen, but am pretty lost around a smoker.

My fish of choice is the walleye and I pursue it year round.  Walleye, bluegills, and perch are the only fish in my freezer and I have a freezer just for my fish :)

My drug of choice is hot peppers.  Trinidad scorpion, ghost pepper (Bhut Jolokia) and the scotch bonnet are my favorites at this point in time.  

I can cook up a storm on a charcoal grill but really think I would have trouble smoking on one.

Howdy Jeff and welcome aboard!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

If you didn't read the "SMF User Guidelines" .....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per TulsaJeff. Not that you have done anything wrong....just a little bit of FYI for new members!
