So for the first time in at least 5 years my wife wanted to do the grocery shopping. There is always a problem when she goes so I have been names the grocery shopper (which I like doing). Anyways, she came home with the pork steaks I suggested and they were thin sliced. I usually smoke regular sliced pork streaks for a little over an hour at about 275. I'm worried that the thin sliced pork steaks will not be tender. Has anyone had success with the thin sliced pork steaks? Please help, they are going on the smoker in a few hrs and I don't want them to be too dry or tough. Any suggestions?

Hello jpayer.  Here is my opinion for what it is worth.  Others may have different advice.  This is only my opinion.  If it were me I wouldn't even try to "smoke" them low and slow.  I assume you are talking about those "breakfast" pork chops that are around 1/4" MAYBE 3/8" thick.  I would get the grill going REALLY hot.  Get some smoke happening and slap those things on for about 2- at the most 3 minutes per side.  Any longer and you may as well eat your shoe.  Just my opinion.  Good luck.  Keep Smokin!

If you're wanting the smoke flavor, you could could smoke them for 30 min-45mins then grill them on a hot grill. Several of our stores have switched to all thin cut (beef and pork). Drives me nuts!
