Cut back on the coals used but, still, this thing runs HOT so must be watched. Gave the TT and overnight rub and 'hooked' it over offset coals using a Weber coal basket. I could cut back even more I believe to lower the heat level (maybe). Regardless, I pulled this off at 140 IT and let it rest before slicing on the bias. It had a beautiful bark and was absolutely moist, tender & delicious.....one of my best ever I believe.

Another yummmers for you Chef! Love the beg keg cooker!

Myron would be prouder if you used lighter fluid....which is yuck to me.

LOL.....oh yeah, forgot about that.....he is fond of it, isn't he. Haven't used it myself in many years...was surprised at how expensive it is now. And please, just call me Willie

That is a sight to behold!!!! Love the smoker too, great idea there. I've got 2 TT's in the freezer waiting for elk hunting season to be over!

LOL.....yeah, funny contraption that took the edge off my desire to pop for a pellet pooper a month ago. Cooks like a volcano....wish it was a little deeper for hanging racks of ribs which is my next cook in it.....Willie
