Trimmed, rubbed, wrapped, and into the fridge. This will go on tonight for an overnighter.
I've never trimmed a pork butt before but wanted to try trimming off the big thick fat slab on the bottom to get the rub on the meat instead of the fat. This will go into the smoker tonight at some point for an over night stay. We shall see how this goes.
