JAPB - Just Another Pork Butt :) - UPDATED with Q-view

Trimmed, rubbed, wrapped, and into the fridge. This will go on tonight for an overnighter.

 

 

I've never trimmed a pork butt before but wanted to try trimming off the big thick fat slab on the bottom to get the rub on the meat instead of the fat. This will go into the smoker tonight at some point for an over night stay. We shall see how this goes.

In at 8pm.

Smoker temp holding 230 pretty well. I'll probably tweak it a couple times before I end up going to bed as the outdoor temp drops, meat starts to heat or whatever. Not even sticking a meat temp probe in it until morning. I'll be up around 5:30 when the wife gets up to get ready for work. Might check it in the middle of the night if I wake up to pee or something. Otherwise.... it's on cruise control :)

10pm. I opened it to add some apple chips and I'm waiting for it to recover. Smoker temp dropped to about 200. OK, now 10:30 it's up to 220. I think I'm ok.

 

Going to bed. See y'all bright and early! :)

Geez, I could check on it every hour'na'half for ya if I was there! lol!  Just love old age!

Awake at 4:30. Smoker temp at 230. I think I'll make some coffee. 

Oh, and the outdoor temp is 42. No wind. So the smoker temp didn't change much with the outdoor temp droppin'.

Went out and stuck the meat probe in at around 7:30. I honestly expected it would have to go another 3 or 4 hours. Meat probe said 199. So I came in the house and got a cooler ready and laid out foil to double wrap. Went back out, moved the meat probe just to check another spot, and it said 205. It kinda broke into 3 pieces as I moved it to the foil, but... *shrug* ...

It's double wrapped and resting in a cooler with towels. Nice bark and good color. I'll defat the juice so I can make a finishing sauce.

Yeah this one was nice. :) 'Course it was kinda early for dinner so it's all pulled and in the fridge. Tomorrow is supposed to be rainy and windy. So I'm getting ready to put a chicken in the smoker for dinner tonight. We'll have the pulled pork tomorrow and some of the leftovers from the pulled pork will become pulled pork enchiladas. Leftover chicken becomes chicken salad.
