Seasoned a lb of ground pork and 1/2 lb of Jimmy Dean Maple sausage with onion powder, minced garlic, Chinese 5 spice, S&P and just a bit of Italian bread crumbs for better binding. Then I sauteed diced onion, green pepper and apple in a little olive oil & butter with curry powder and pumpkin pie spice as seasonings.  Rolled it all up with a layer of sharp cheddar cheese in a bacon lattice with a dry, zesty rub.  Smoked with Jack Daniels chips @ 250* til it reached 165*, spritzing occasionally with cherry juice.  Let it rest about 1/2 hour then dug in!  SOOOO good!


 
Thanks, Gary!  Pumpkin pie spice and apple pie spice are very similar...thought it might enhance the apple idea...and it did!  Used more pie spice than curry.  Sorry - I never measure anything or use recipes...just go by general 'experience', I guess.  
 
Interesting fatty with a difference. I love it when people make food their own and this looks great! Thanks for posting.

Thank you, Disco.  Appreciate the nice comments.  As a personal chef, I just don't have time to follow recipes to any detailed degree.  Making such a variety of foods, it just comes natural after awhile.  The whole smoking-thing is new to me, tho'....so I'm learning a lot from this site and experimenting.
