Well I see there were some comments already. Stale smoke kills the flavor.
FWIW I have been smoking for over 10 years. I have chicken, ribs, and tri-tip and roasts down to where I like them, and am proud to serve them. I still do not have my brisket to where I am happy with it. Other people say it is great, but I am not happy. Once I am happy, I know everyone else will be as well. Keep at it and keep reading here.
