Late to the thread but I am really impressed by those ribs. You are moving me to try without foil just to compare.

I know I am late to the party but I vote no foil as well.

Did some ribs this weekend all four racks were around 4.5 lbs took 7 hours unfoiled. I think you may have needed to render out a bit more of that fat.
 
Mine took 5 hours.   

Maybe I should have tried a lower temp, but they were still good.
 
Yeah they looked a bit blackend, but heck if I had your time constraints going I would have gone the higher temp route as well. Other than that they looked juicy, and I am sure had great flavor.

The bark was awesome.  Thin and semi- firm bark.

I was running around 260.
