Dutch Oven Slow Braised Beef Short Ribs and Roasted Rosemary Potatoes - Perfect "Wednesday" Dinner for two!

It's was too chilly to stand outside so today I decided to cook inside - I made Slow Braised Beef Short Ribs cooked in my Dutch Oven pot.  It's been awhile since I cooked in my "inside kitchen" lol......tis' the season for slow cooking.  Here's my Slow Braised Beef Short Ribs and Roasted Rosemary Potatoes.....Happy Hump Day!

cooked my Braised Beef Short Ribs low and slow - 275 degrees for 3 hours and they were fork tender and delish....

 

my dinner Slow Braised Beef Short Ribs, Roasted Rosemary Potatoes, green salad and a glass of my favorite wine.....will definitely have more than one glass!

 

fork tender Slow Braised Beef Short Ribs - oh so good!

 

was good to the last bite :banana_smiley:

Yumm!! Looks great Josie! Chilly in Vegas? It was 32* this morning here, that's almost chilly!

now that's chilly......it was in the high 50's here and that is chilly for Vegas.  Personally I prefer the HOT triple digits - not so hard on "old bones" lol.
