Prime Rib!!!????

Prime rib is excellent smoked. I really like using cherry and pecan wood. We like ours on the rare side so we take it to 125-130. Pull it off the smoker tent with foil and let it rest for 45 min. Then slice. Smokey Au Jus is good too. Look at Chef JJ's thread for that.

WOW, that  looks awesome! I have smoked a lot of different meats, but prime rib has never been one of them.  will be changing that soon.

That pretty much sums it up, oh and a light dusting of SPOG, nothing overpowering, let the flavor of the beef shine!
 
Here's the link to the Au Jus. If your smoker allows you too, stick the pan under the roast (don't put the roast in the pan, next grate down or stick a wire rack to hold the roast above the pan) so you get all the good drippings mixed in there too. Another variation you can do is to smoker roast veggies. Same thing place the pan under the roast to catch the drippings.
