Had a MES 40 w Window n Remote for a couple years.  Love the capacity where I often load up 40# of chicken / pork and smoke it up then store in individual freezer bags until needed.  Looking forward to trying some of the suggestions I have found here in the near future.  Deer season just started here so I am looking forward to getting some venison and perhaps a couple of pigs next week.  I have a pig trap where I caught a 175# porker last year.  It with the help of the MES 40 made for some really tasty lunches!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

I'm just up the road from you. It's about time for me to bait my hog trap.

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

Hello and welcome from East Texas. This is a great site, lots of information and great people that are willing to throw in their two cents worth on about anything.  


Hey Chuck, love Hot Springs, One of my favorite places my grandparents, aunt, uncle mom and dad were Hot Springs. My wife and her best friend were there weekend before last on their way up  Eureka Springs to see the Passion play. WE keep talking about getting a place on Lake Hamilton. And McClard's is my favorite BBQ place outside Texas . MY grandparents lived on Violet St. and my aunt and uncle lived on McKay off Richard( Long time ago)
