got some boneless beef ribs taking up room in the freezer so they are gonna be this weeks football party favor

only problem is not real sure how to make em,   I guess i could do like a CSR  but would like to dress em up some

maybe a rootbeer or coke based sauce/marinade.   Or a nice thick stout beer sauce.

should I sear then smoke?

would apprerciate any and all ideas or thoughts

thanks in advance

Hmmm, Personally, I'd do them like CSRs, but because they are Beef, I'd lay down Worcestershire (Thick) instead of Mustard, and then CBP, Garlic Powder & Onion Powder, instead of a Rub used for Pork.

Then I'd watch out for Hungry Bears Prowling the area!!!

Bear that sounds good but I found this stuff today

found a nice caribbean chimichurri marinade

very thick like a paste, not hot just a good array of spices

going to soak overnight

I'm just going to smoke like csr's  as i did not find any other better options

That's gonna be one hellofa fare, I guess I better get some more beer on ice

well I had em in for two hours and they looked good, temp at 110  so i pulled and wrapped in foil

added some cranberry juice some hickory flavoring and covered with some red chili pepper jelly

Back into the GOSM sealed tight for about an hour i think

Need to do some more research and experimenting with these,   Heres the final product   they were ok not as good as the csr's  gotta cook differently with the beef than the pork

heres a sliced shot, crust came out good,  meat tasted good but not very juicy  next time i might inject them or use a different marinade to add moisture to the meat

I don't think she cares

oh well at least the gators beat arkansas   so LSU is next on the list   that will be a big one!

thanks for looking

LOL---She doesn't care one bit !!!

All I coat my Beef with is Worcestershire, under CBP, Garlic Powder, and Onion Powder. I like the Beef to give it's own flavor. I think Pork needs more help than Beef.  But then I'm a Beefaholic!!!
