My name is Zach and I just bought my first smoker!
I live in Columbus, OH now but I'm originally from North Carolina so I grew up eating Western NC style BBQ. Despite enjoying great BBQ for years I've never tried my hand at it so I'm looking forward to digging in.
Based on the good experience of a couple of NC buddies, I went with the Char Griller Akorn. I assembled it the other night and it is sitting on my back porch waiting for its first challenge. Any tips for an easy first runs? I'm really new to the this so I've been devouring youtube videos and lurking on SMF for awhile now. I'm still waiting for my new temperature probe to arrive and I need to get a stone or some other heat deflector type set up but I'm hoping to make my first attempt this coming weekend.
