Here is the beginning of my first BBQ adventure. The smoker, MES 30, started smoking at about 140 degrees. Going to try a light soak on the next batch of chips as this one clearly is going to burn out fast. Using hickory and a very simple rub. Really this run is just for me to get to know my smoker. The second picture is the smoke coming out of the wood insert area, even though the insert is in. Think this is my first opportunity for a mod. Something removable that can still seal this up better.
