Hi, I've got various crates of of wood chunks for smoking such as oak, cherry and peach that have been sitting for awhile..does anybody know if wood  loses its quality and aroma as it ages?  I've had it sitting around awhile and was wondering if it would get the same smoking flavor.....                                                                                                                                                                                                                                                                                                               
 
 I found a few really old boxes (25+ years) of apple from my grandpa in large cardboard apple boxes in the garage. When I lit them they smelled musty. You will be able to tell if they smell funny when you lite them.
