Hi everyone, my name is Jim Holmes and im from Shelbyville Illinois. I am a beginner to smoking, been looking at smokehouse designs and think ive come up with what i want to do. im an avid deer hunter and butcher my own and make a lot of jerky thought it might be nice to try smoking some after i marinate then throw in the dehydrator or just finish in the smoker. what id like to do is a hot/cold smoker. my design is a 3' wide X 2' deep X 6' high with layered walls the outer wall will be tongue and groove probably pine on a 2x2 frame a layer of fiberglass insulation inside of that then a layer of concrete board then ive got some 1/4" metal spacers im going to use for a dead air space then aluminum flashing for the final inside layer. does anyone see any problem with the dead air layer? just figured this would give an extra layer of fire protection as i want to be able to hot smoke also say 250 or maybe 300 deg. gonna use a gas burner for the heatwith a cast iron pan on top for wood. for the cold side i was thinking of getting a pellet burner to add into the mix. sorry about the long post just trying to give a good mental image of my idea. thanks in advance for any feedback. wont start collecting materials till i see if the idea is good or bad

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Hello Jim and welcome to SMF! 

Can't help with the proposed build plans you mention, but you might start a thread in Smokehouse builds and I'm sure someone will come along with some answers for you.

I make loads of venison, elk, duck and goose jerky in my smoker and it's so good coming out of the smoker.

Check out the Making Jerky forum for more ideas or give me a yell anytime with questions.
