Finally made some respectable ribs - Q view

This is my 3rd attempt at ribs. The others were just okay and not very good according to my wife. I didn't give up. After watching the first 2 seasons of BBQ Pitmasters I was determined to get a good rack. When I asked my wife what I should do differently she told me nothing. She fought and won over the last rib. 

All trimmed up and as you can see rubbed down with some Plowboy's Yardbird rub.


After 3 hours at 225 on my mini WSM they were ready to be foiled. I foiled them with butter, honey, and turbinado sugar.


After 2 hours in foil. Foil removed and back on the smoker.


Of the smoker and sliced ready to go.


Plated up with some green beans with rib ends and rib drippings mixed in. 


The didn't pull off the bone when you took a bite but as you can see all the meat easily came off the bone.

If you can make your family and especially your spouse, happy with what you cook then that's all that matters

Great job on the ribs!! And the trimmings mixed into green beans is an AWESOME idea!! I was raised on my Grandmother's green beans and have frankly never been a big fan. She always used a  smoked ham hock for flavor, but would remove the meat to use elsewhere!! It was always a treat when she'd miss a piece and it ended up on my plate. I suspect that sometimes the "missed" pieces were not entirely accidental. She was a stern, thrifty woman but had a big heart and would indulge us kids on occasion.

Thanks for the idea! My wife loves green beans and this might make me more likely to tolerate them.

Although "ready mix" rubs are almost impossible to find here , I guess I have to invent one...

Trimmings and dripping in the beans = great idea !

There is a rub that I have used quite often, it's a Memphis rub and works with both pork and chicken pretty well.

Not being a ginger fan I omit that but you can customize this any way you want.

Get the Recipe for Jeff's Naked Rub! My wife won't let me use anything else - and I'm not complaining! Well worth the couple bucks for the recipe - I like it because it only has 2 Tbsp of salt in the entire batch and I can use it as liberally as I want. Our best friends come for ribs and insist I don't use any sauce - just the rub!
