I am really interested if you were able to get your PID figured out to work the way you wanted it to??

 

I am building a fridge build and am wanting to order parts here soon and want mine to do the same things that you described on page two.

I have more info in another post however I went with single PID with ramp/soak. I decided to use a meat probe for internal temp.

I built a very similar smoker out of a SS hospital cart. Yours looks very nice. I added a low voltage transformer and a low voltage computer fan in the control box:




I would also suggest a little fart fan motor with a steel or aluminum fan blade (for air/smoke/heat circulation) make a huge difference in time and repeatability.



Tough to see there, but works amazingly!
