I've been doing a bit of reading on this site and this seems like a great community of friendly people.

My dad was a chef and butcher, so i've always been around meat.

Now we are really into curing meat and smoking so i'd like to build my own Cold smoker.

I just picked up this beauty that i'd like to convert into a smoker




I'm looking for some inspiration, guidance, suggestions...

not sure which direction i want to go in.

Either cut a door on the side and fab up two racks one low and one high

or cut a door on the top/dome... same thing, some racks inside.

I'd like to build a fire box that I will place at 10' or further away, effectively cooling the smoke down...

at least that's what i'm envisioning....
 
Howdy and welcome to SMF... I love this beauty you found! Was it a water tank? Its looks mighty big.. which is nice... in reference to the wagon amd fence! Whats the dimensions of it! Either way I want one... different! Cant wait to see whats done with it!

I haven't actually measured it yet... but eyeballing it, its about chest height, i'm 5'8"... so it's about 5' tall..... more or less.

and maybe about 3.5~4' wide...

i need to get those legs straightened out.

I'd like some inspiration from others who are doing cold smoking.... and others who have used a similar tank, barrel, metal container for inspiration..

^^^^ Is a very popular smoke generator used by many on SMF and Todd is one of the Sites sponsors. .. would be perfect with a few mods to just use this as a cold smoker...


This is my UDS.. mainly used for hot smoking.. but the mailbox mod on the side is what my AMNPS fits in.. and the smoke in the picture isall from this bbeauty of an item. .what I cold smoke in sometimes..

For yours..
Maybe cut the "lid" off so it could be refit snug.. and just put a couple of grates inside and youll have just a cold smoker...

But something that big in diameter I think would be great for hot and cold smoke... would hate to waste that big of cooking area unless all you want is to cold smoke

Hey, another guy from Kern County. I'm from McFarland and I just joined a few days ago. For those that don't know it is a filter for irrigation water. Where did you get it from?

Good luck on your project. There's a bunch of innovative people on this board that can help figure it out.
 
Welcome to the forums!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.  

That's a cool tank you found!  You'll probably get lots of good input if you post photos and ask for advice over in the smoker builds forum...

once again, thank you for the kind welcome.

I'll start a thread in the build section so i can receive suggestions on my build

i'd like to experiment with different kinds of meats, and since i'll be using a cold smoker, i'd like to also try cheeses, and whatever else i stumble upon that would be good :D
