Doing 3 racks of spares from Costco.  I like how they're already St. Louis style.

For 1 rack, I used FMCowboy's Asian rub as a base and made a few changes (used a mustard soy glaze) and will add more Sriracha than the recipe calls for.  This is my first venture with Asian ribs.

The other 2 racks are my basic rub that is really close to Bob Gibson's rub.

For fun, I'm tossing on 6 jalapanos and 6 habaneros that I'll throw in the dehydrator after they're good and smoked.

About to go on the smoker now!

We'll see how this goes.
 
2 hrs in.  Will foil in an hour.  Looks like a couple of the jalapenos are starting to get roasted rather than smoked (I put a couple of them over the direct heat by mistake).

 
Ill be honest. I haven't decided what I'm going to do, but a crushed smoked habanero dust sounds pretty awesome.
 
My folks just came over so I forgot to take a picture before I foiled them.

Put honey, sauce, brown sugar, and apple juice spritz on the bbq ribs.

Spritzed the Asian ribs with apple juice.

Will unfoil in an hour.

Peppers are looking good.

Looks like we're all finished!

The habaneros - These did a great job of drying out.  They don't even need to be put in the dehydrator.  I think I'm going to turn these to habanero dust.  Hoping it doesn't taste too charred.  I'll give it a try tomorrow.


The jalapenos are looking good.  They'll need several hours in the dehydrator, but I think they're going to turn into decent chipotles. 


The BBQ ribs - Solid as always.  I took a tug off the end to see how they tasted, but I'll be sticking these in the freezer.



The Asian ribs - I guess I'm just not a huge 5 spice fan.  I took a tug off, but it was a little "spicy".  Not hot, but it had a lot of pumpkin/nutmeg kinda spice.  I'm going to freeze these and give them a full taste later on, but I'm not sold yet.  They look pretty good, though.

It's funny you mention it.  I literally just got them out and put them in the food processor.  These peppers got thoroughly dried out in the smoker.

Wow wow wow.  This is some serious, smoky heat.

 
That looks outstanding!  I only have one question, how are you going to clean out your food processor ?!?!?!?!!?  I bet that thing glows in the dark after that pepper

Haha.  I know what you mean.  I just cleaned it like normal with dish soap.  I'm hoping the peppers don't stick around too long.  That would give the baby a fit if we blended up something for him.

I've got the jalapenos in the dehydrator now, so we should have some chipotles in a few hours.

Those would be some spicy mushed peas!!!!!!!  Salt, milk, and alcohol will help neutralize the spicy capsaicin.
