Hi all,


Im Brian or Bri,

I am the wrong end of 60  ex Railroad Signalman. and just bought my first smoker and have learned a few lessons already! I suddenly realised  that my propane BBQ was just an outdoor grill and was disappointed with the results so decided to read up on a few different ones. In the end I bought a Brinkmann Trailmaster L.E  and probably made the same mistake as a few others.... I  put it together without any bother apart that the two holes on the firebox to main body didnt line up so had to sort that. I then did the cure and was a little disappointed with a few leaks but it seamed to settle down . I did all the right things ..........................apart from get my butt on here for some tips. to cut a long story short my first go was a brave one and I turned a beautifully fresh brisket into a solid lump of creosote tasting wood, I ended up giving most of it to the dog who refused to eat it and then bit me i can think the only reason for that is that I was more tender than the Brisket.


But then I spent a week or two reading on the forum. I have now done all of the mods advised on here inc. tuning plates, fire basket, door clamps, sealing the grill door oh and rebuilt it using mastic. What a difference.

Hello Brian, and welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
