So the Summer Sausage is Ugly but Delicious. I cut open one with cheese in it and the cheese made it, so we had a fat out. It wasn't a total fat out as its not dry and damn tastey.
I pulled the casings off all of then and wiped/scraped the fat that collected on the outside and then vacuum sealed them. They are presentable enough for my family.

hahaha!!! Ya, but most are going to be give aways and I wanted to make them look nice... that's only part of them... the ones for me are just zipped locked
