I recently wrote a review of the Napoleon Apollo here...

...and in the comments section, I mentioned that I'd post pics of my setup.
Did babybacks tonight, and here's how it went....
Three chunks of wood near the outer edge.
Fill charcoal basket completely with unlit charcoal. Chunks of wood are now buried.
Remove enough coals from the center to create a 5-6" hole and put those coals in a chimney.
Light Coals in Chimney.
Put lit coals back into the center. Put a chunk of wood on top. As the fire burns, these lit coals will ignite the unlit coals, and also smoke the buried wood. This setup can give me a good fire for 8+ hours at 225-275 with very little fuss.
Fill water pan within an inch or so of the top. I like to put a rock or brick in the bottom to keep my foil from floating.
All set…..will be at 225 deg in about 15-20 mins.
Ribs are on.
