Hey guys, I'm Charles and I live in South Central Mississippi. My experience with BBQ is mostly just home cooking, but several years ago, I began to 'tinker' with the whole process. I wanted to make my own rubs, my own sauces, etc.. instead of being forced to use what the grocery store thought I should like. During this time, I developed an entire fascination with smoking, and grilling and want to move more in the direction of cooking at fairs and festivals, and perhaps even some competition cooking. Still have a lot to learn before that time, but I'm enjoying the ride so far.
I'm hoping to soon build my own reverse flow smoker. I know all about the popular ones on the market, but there's a few custom features I want to have on mine, therefore I hope to start building my own within the next month or two.
