Let 'em rest 30 minutes 'cause that's all I could stand!  I sliced them the wrong way, but they were so tender it didn't matter a whole bunch.  OMG!  These things are soooo good!  Even better than Brisket in my book and that is my favorite smoked meat  Short ribs are a must do again soon!  The wife was extremely impressed and was the first to mention we have to do this again

nice smoke ring/ wow they look meaty and good. were they moist? love short ribs. great looking cook , man. and its so satisfying when the bride likes the smoked stuff. my wife is not typically a fan , but im winning her over.

yea.. they really do shrink a lot... the ones with bones look even worse (for shrinkage) when all that bone is sticking out... kinda makes ya say "damn... I aint doing those again" until you sink your teeth into them....

They were just right moisture wise.  Not dripping, but the juices were definitely there.  The wife had some KC Masterpiece on the side, but I ate mine plain.  I like the taste of meat, not add ons.
 
How do all of you slice them?  If the bones would have been in, these were sliced across the ribs, not with.  I'm thinking I really should have sliced them just the opposite.  They were almost pulling tender, so it really didn't make them tough or stringy

Personally I would slice across grain.
