There is a trout hatchery in north west Ohio that holds a lottery once a year.  If you get picked you get to spend the day fishing the release streams.  One condition, you have to keep what you catch.  Lucky for me my neighbor was picked and he was gracious enough to share his winnings with me.

Brine with 2 cups water, 2 tbs salt, 2 tbs Cajun seasoning for 2 hrs.  Smoked at 200-225 for 1.5 hrs.  Charcoal and cherry.



 
 
So, how do you debone a trout so you can smoke it?

On two of the fish I cut them into two fillets per fish and deboned before smoking.  On the other one I smoked it whole and then tried to debone.  I have to say IMO deboning as a fillet before smoking was much easier.  I just pulled the spine up from the fillet and the bones stayed attached and came right out.  I had to use a tweezers on a few stranglers but no big deal.
