all of you above... and really... all of SMF... it started here 3 years ago... and with out SMF I would have been doing 300 hotdogs for people yesterday... 

Im so excited I decided to do this.. and with out a few nudges from a few on here and some confidence boost (Thanks eman.. Keith....)
Thank you DaveOmak for the few cinder block tips... I saved the concrete underneath....
SoFlaQuer..... I owe you a very big thanks for the finishing sauce recipe and I used  one of you mustard based bbq sauce.... both were the hit of the night I think over the pig itself.....
I forget whose brine I used.. but thanks :P 

I wish I could have documented better with more pics (its just hard with only me and Mikey helping me... usually both of our hands where full when I really wanted pics...) I was looking to do a good Thread for SMF on.. but, between all my digital therms not accurate.. not many good pics.. and I dropped the ball when it really came time to serve..... I apologize.. I GUESS ILL JUST HAVE TO DO ANOTHER PIG :) 


anyways... THANKS everyone for watching and playing along... Glad there was plenty of Popcorn... :biggrin:  to go around.....

Thank you C! And dude.. if I can do it... anyone can!!! Just brink\g some people that know how to cut up a hole anima to help.. two of us took a bit it seemed.. that was the worst part of the day.. trying to feed hungry people and pull and chop and slice and carve and slap peoples hands playing with the head.. lol...

Thanks bear. I didnt want to upload all 300.. lol.. but the ears where the first to go cause I gave them to a friend who had to leave early.. so most pics are earless.. .. going back through the pics I see what ya mean ;)

Seriously , brother , you knocked that hog right outa the park. Great job. :sausage:

With the cover and a few vents I could control temps. Easily. . I held 250*275* for about 8 hours. I only used a few bags of charcoal (20lb bags... and half bag of chuncks.) I believe 3 where used total.. but I had a wheelbarrow loaded with unlit for ready use that accidently lit so I used that for some other side items (veggie dogs and such for the none pig eaters)

And that rotisserie should be an easy fit. I wish I would have rotated mine half way through..
 
looks great! cant go wrong with a cindy pit. used one for years with awesome success...just moved into a new house and am thinking about tearing up a piece of the backyard for the rise of a new cindy pit.
