Looks like it's gonna be a dang good day for some football, beers and brisky! I picked up a 12 lb. packer from Costco yesterday and followed the injection/rub recipe in Chris Hart's "Wicked Good Barbecue". Fire is goin in the 16" Horizon Classic, coffee is made......almost time to put this bad boy on. I'm using cherry and apple (all I had readily available). I'm planning about an 11 hour smoke at around 250 degrees. Action photos to follow. Here she is resting, getting ready for her spa day, along with my little rig :biggrin:
