Spare ribs and pork butt together?

I'm new here so I apologize if this question has already been answered, but I couldn't find it. I have to be doing something wrong, I know.

Anyhow, I have 4 slabs of spare ribs and an 8lb butt that I plan on injecting and doing a rub for tomorrow. I'm trying to get a nice bark on the butt and I know you're not supposed to touch it until its almost done, but how do I do that with the ribs being in there too? Just avoid mopping? Or can the ribs take that long smoke since they'll be injected as well?

Thanks for any advice in advance - I'm still semi-new to this smoking and just using a Masterbuilt electric smoker.

It is not a problem to have 2 differant meats going at the same time. Just try to keep the lid

closed as much as possable. You can do the 3-2-1 on the ribs. Take the butt to 200°-205°.


When you get a chance will you drop by roll call so everyone can give you a proper SMF

Not sure what you're asking. But you should be starting your butt hours before the ribs. Use the top rack for the butt and when you are ready for the ribs put them on the racks underneath. On the mes try to remember to turn both the ribs and the butt 180 degrees about half way thru the cook time as the right side of the mes tends to be quite a bit hotter than the left. Spritzing or mopping either just the ribs or ribs and butt a couple times isn't gonna kill your bark. You'll be fine.

If doing 3-2-1 ribs, you will have to wait a bit to put them on as the butt will take much longer to finish. Doesn't really matter which rack you use.
