Ribs and Wings - First post of a smoke with Q-View

Been reading a lot since I joined, posted a couple of times but this is my first time posting a cook. Been smoking on my Weber E310 for about 3 years now, mostly ribs, wife agreed that we need a Yoder YS640 after visiting a dealer about an hour away and seeing one at the cookoff in New Holland Pa, but life happens and it will come eventually. Anyway, I had family & friends over on Saturday and wanted to do baby backs and wings. Wife got two cryo packs of ribs and a pkg of wings from BJ's. Got home from work on Friday and opened them up and was really disappointed, they looked like someone just hacked the crap out of them. Not what I had gotten in the past from BJ's but it was too late at that point. I trimmed and cleaned them up the best that I could.

I did my usual rub, TastyLicks Ribit Rib Rub from Fred's Music and BBQ store and some McCormick Garlic and Herb seasoning.



Had them on for almost 3 hours at 250*. I the added a little honey and TastyLicks Secret Sauce and foiled each of the 4 racks and put them back on for 1.5 hours at the same temp. Pulled and unwrapped and put back on for 45 minutes after which I foiled two each and put in the cooler until I could get the wings cooked.






For the wings I took a third and marinated with teriyaki marinade, another third with the TastyLicks Secret Sauce and the last third with Weber's Roasted Garlic and Herb Seasoning that I picked up from Fred's when I was getting my sauce and rubs. Put everything in the fridge for two hours while the ribs were cooking.






Sorry, no plated pic's, my daughter put them on the table and you would have thought they never ate before. My one sister did a potato salad and a broccoli with bacon salad, which are fantastic. Needless to say there were no leftovers. So aside from the satisfaction I get doing this I also get to look out the back of my property and not see any homes behind me. Thanks for looking.
