Large Trailer Smoker Question

I joined a men's club at our church and they have a large trailer smoker but no bbq guys to run it. It is really big. The firebox is about 3' x 2' x 2'. The metal is really thick also. I have been successful putting together backyard bbq with my NBBD, Vertical Smoker, and Mini WSM. What will I need to learn to make this baby run awesome. I think I can practice on it a couple of times before I have any big events. What are your thoughts? Basically I can cook really well for 30 people, I need to learn how to cook for 300 people. Anyone in the DFW area want to let me tag along to a catering event?

Max... if you can get some pictures that will give us a little better indication of what your dealing with... by the sounds of it you will have to use wood for the heat...
 
Max, evening.....   Practice controlling the temps using the inlet air vents....  make sure the smoker is sealed with no air leaks for good temp control...   small air leaks will KILL your temp control....   if you have got those fixed, you will be good to go....    so many times folks think a small air leak is not a problem.....  WRONG.....  

the rest is up to your seasonings and smoke....   Less smoke, is usually better, when feeding the masses....
