Practice run this weekend as our kitchen is not done yet. We will be using Gerber Chicken Splits, family owned company out of Southeastern OH, near Canton. Visited facility, convinced these are some of the best birds in the country.
Rubbed with a Honey Rub from Butcher Injections, Dave was kind enough to send samples after attending the Cookshack Restaurant Workshop this summer.
Moink balls were a Chuck / Pork blend (70/30) ground by local butcher who also smoked the thin cut bacon wrapping these little nuggets of goodness.
Over all, cook went well.
