Wow it's been a while since I've been on this forum. Anyways, I decided to do some country style ribs. A little spur of the moment I know but none the less they are marinating now. Plan on using some honey as "glue" for the rub.

Here is a pic of the marinade which included apple cider vinegar, beer, mustard, brown sugar, tobasco, balsamic vinegar, olive oil, fresh tarragon, fresh onion, and fresh garlic.

I have learned in the 2 months and several smokes I have done is to Marinate your ribs in Cider Vinegar, Honey and Olive oil and any spices you might want to add, for 24 to 36 hours, then take them out of the marinade and rinse them off.  Then, use honey as the glue for whatever rub your using.  Then 2 - 2 - 1 for Baby backs or 3 - 2 - 1 for St Louis side ribs.  Set Smoker at 225 degrees and enjoy some of the best ribs you have ever tasted

Well decided to hold off till tomorrow to smoke the country style ribs. It would have been a crime to take em out of the marinade after only 4 hrs. Qview tomorrow
 
Got em on... 27 hrs in the marinade. Running a little hot right now 300*. I'll get that worked out. Here's some before qview
