In our Fantasy Football league, the rule is that whoever loses the championship game gets to host the next years live draft. My wife lost in the championship game last season, so we got to play the gracious host.
I decided a while back that I wanted to use the opportunity to get some feedback on my budding smoking skills and went out and bought 11 lbs of pork butt and 2 good size chickens (about 10 lbs total). During the last week I decided that I wanted to try some ABTs for the first time as well since everyone on here seems to love them.
I woke up at 4 on Saturday morning and got the Old Country Wrangler fired up. I'm finally starting to get the hang of controlling the temperature. It's still a work in progress, however. By 6:15, I had the butts smoking. After I put the butts on, I went ahead and started brining the chickens.
Just before 8 PM, I pulled the butts off to finish them in the oven and put the chickens on. I took off the last chicken just before midnight.
I prepped the ABTs, while allowing the chicken the butts to rest. I then pulled the chickens followed by the pork. It was 2:30 when I finally went to bed. I woke up Sunday morning and got the Weber going steady at 225, put the ABTs on and went off to church. By the time I got home, my wife (who is still home after having just had a baby) had pulled them off of the grill. They were phenomenal! I just stuffed them with cream cheese and wrapped the in bacon. I have some ideas for stuffings for future batches.
