Went to Academy yesterday and got me an Old Country Brazos pit. Got it cleaned and seasoned yesterday afternoon and played around with fire and temps also.

Got me a fire started this morning and just loaded three butts and two rack of ribs so I'm all in on my first attempt. Here is an initial photo with more to follow.

Here is a better photo of the Brazos. The lids did not seal perfectly so I used an adjustable wrench and worked my way around slowly bending the strip of metal and now have good closure on both doors. Quality control could have been a little better but overall I think this a lot of pit for the money based on my research.

Looks very similar to my OKJ Longhorn - your exhaust stack is certainly larger in dia.

Have fun with the new toy!

Great looking pit! Look forward to hearing how the food turns out. Have fun with it. Is that strictly a stick burner , or can you use charcoal as well?

Tried the 2-2-1 method for the baby back ribs but they were falling apart tender after the second hour so not photo. They were overcooked but edible. Here is what remains on the pit:

You might want to verify your pit temp with another therm. The dial therms that come with some of these cookers can be off by quite a bit.
