First ribs on the uds

I got 2 St. Louis style racks of ribs and just made some of Jeff's rub.  

I am using my uds and a rib rack.

I need some advice.

First I want to smoke at 250 - 275.  Any problems going that high?

I am not going to foil.

I got 2 brinkman rib racks, should I cut the ribs in half for the rib racks?

I am going to use pecan wood chunks.

Sounds like a solid plan. Get em on there and let's see some smoke! I run 265*-275* all the time and have no problems. Bend test will let you know when they are done.

  X2 what he said...275 is no problem, and the bend test is a good way to know when they're done.

Thinking they are about done. Toothpick tender.
 
Just sprayed with apple juice and foiled them.

Dinner not ready yet.
